How to calculate dough temperature
Bread will turn out better if the temperature is controlled to 80° F. The temperature of the dough depends upon the following variables:

Example: Assume room temperature = 72° F. Flour temperature = 70° F. Friction allowance = 32° F Rule of Thumb formula: {(80x3) –32° F } – (72° F +70° F) = 66° F |
